Summer risotto

Risotto is one of those meals for me that brings all the feels.

On the occasion I go out to eat and it’s somewhere Italian, you better know I’m getting the risotto. How could I pass up having someone who knows what they’re doing making me one of my favourite dishes!

I live for the day when I finally get to go to Italy and I find those family run restaurants in the middle of nowhere and the owners make a seasonal risotto….I will be in literal heaven!

This base risotto recipe will work with pretty much any veg that needs light cooking
